I want to share this AMAZING gluten free and yes, even paleo-approved banana bread recipe that I made today. It was highly recommended and I can agree that it was totally yummy! The story of why I’m (once again) eating a gluten free and paleo (mostly) diet is below. After you know my banana bread story, I recommend that you MAKE THIS amazing bread today! It’s been a long time coming. I kept saying, TODAY I’m going to eat clean, and finally cut out the sugar. I mean I was doing pretty good, usually the only sugar I had was my daily 1 or 3 cups of sweet tea and a small piece of dark chocolate or 2 after a stressful day at work. After all, I deserved it!!
But who was I fooling? Really, no one but myself. Just in tea and chocolate alone, I consumed a lot of sugar daily.
Other than sugar, I eat clean, I told myself. French fries a couple times a week isn’t THAT terrible.
Other than THAT, I eat clean, I continued to tell myself. I only had pasta (the bad kind, meaning it had GLUTEN) a couple times a month. And bread to go with the pasta (also the bad kind).
Okay, but I also ate fish, lean meats, eggs, salads several times a week, and my daily recommended amount of fruits and veges (most days). And I rarely ate processed food. I mean, that’s pretty clean right??
Sure. Until one day recently, my body told me that it just wasn’t clean enough. (Maybe I had been slipping a little, after all it’s the holidays…)
So a week ago I decided, I’M GOING TO EAT CLEAN, and mean it.
And for those of you reading this wondering what it means to “eat clean,” it means eating fresh produce, whole foods, preferably grass fed and free range meats, no processed foods or refined sugars, as well as eating smaller meals and making sure to have a good balance of nutrients in your meals, and be moderate with fat and salt intake. Paleo for Beginners is a good book if you are interested in learning more about getting started on a paleo diet.
I decided on that day, that I had to get back on a healthy path. It was time. The recent visit to the ER told me that. I had been slipping, a lot. Like, leaky gut, a lot.
